Gluten Free Lasagna

Yeah, this lasted us two dinners, then lunch ALL week!
 Two weeks ago I borrowed a manicotti recipe from The Food Network's Giada.  I subbed in gluten free lasagna rice noodles and made a lasagna instead of manicotti.  It was amazing!  The main difference between this and regular lasagna was this awesome ricotta, mozzarella, and parmesan layer.  (See below.)

I used Prego Original for my marinara sauce and added in a can of diced tomatoes into the top layer.
