Beet Hummus

Ah yes, I have truly reached hippiedom now!  I still had two beets to use up from my CSA after my beet chips, so I went with beet hummus since I had all of the ingredients laying around.  This was so easy, tastes super good, and is, well, really fun to look at. The recipe is from A House In The Hills.
Beets after being boiled, chick peas, garlic cloves, salt, lemon juice, tahini, and olive oil. 
This makes it look red.  It is not red. 
It is magenta!  Hahaha, very fun to eat.
More CSA veggies.  These carrots were so fresh and so perfect for dunking in the hummus!
