Ah yes, I have truly reached hippiedom now! I still had two beets to use up from my CSA after my beet chips, so I went with beet hummus since I had all of the ingredients laying around. This was so easy, tastes super good, and is, well, really fun to look at. The recipe is from
A House In The Hills.

Beets after being boiled, chick peas, garlic cloves, salt, lemon juice, tahini, and olive oil. |

This makes it look red. It is not red. |

It is magenta! Hahaha, very fun to eat. |

More CSA veggies. These carrots were so fresh and so perfect for dunking in the hummus! |
